We adore festive treats during summertime, and these fabulous Fourth of July Firework Cupcakes perfectly fit the bill. Whip these up for your Saturday barbecue to become the amazing hostess we all know you are, and sit back as all your guests gush about the sweet treats before them.
5 pieces red pull-and-peel licorice
6 drops red food coloring
1 cup flaked coconut, divided
4 drops blue food coloring
1 carton (12 ounces) frozen whipped topping, thawed
24 cupcakes of your choice
Assorted red and blue sprinkles, optional
Cut each of the licorice twists into five smaller pieces, then pull apart one end of each to create your firecracker fuses. Set them aside.
Inside a resealable plastic bag, combine the 1/4 teaspoon of water and the red food coloring, then add in 1/2 cup of your coconut. Seal the bag and shake it in order to tint the coconut. Inside another bag, combine the 1/4 teaspoon of water and the blue food coloring, then add in the remaining coconut. Seal the bag and shake it to tint.
Spread the whipped topping over the cupcakes, then decorate with the coconut or the sprinkles as desired. Insert the firecraker fuses into the tops. Refrigerate them until it is time to serve. Yields two dozen.
