While we’d typical like to indulge in a deliciously sugary sticky bun every single day, our skinny jeans beg us not to. As such, we try to keep things on the lighter side. This vegan recipe for Cinnamon Rolls is as delicious as the standard version, but a bit more healthy in the long run. Be sure to exercise some restraint because boy, these are addicting.
For the dough
3 Tablespoons of water
1 Tablespoon of golden flax meal
1 cup + 2 Tablespoons of warm water
2 ½ teaspoons of active dry yeast
4 ½ cups of all-purpose flour
½ cup of sugar
⅓ cup (71 grams) of Regular Vegan Butter or stick margarine, melted
1 teaspoon of salt
For the filling
¾ cup + 2 Tablespoons of brown sugar
¼ cup of Regular Vegan Butter or stick margarine, softened
2 Tablespoons of maple syrup
2 ½ teaspoons of cinnamon
¼ cup of walnuts chopped
¼ cup of raisins
Vegan Vanilla Icing
1) Whisk together water and flax meal
In a small mixing bowl, whisk the 3 Tablespoons of water and the flax meal, then set aside. Activate yeast.
Using another small mixing bowl, whisk the warm water and yeast together, allowing mixture to sit for about 10 minutes so it activates. Next, add flour to a medium mixing bowl. In another medium mixing bowl add the sugar, Vegan Butter, salt and whisk until well incorporated.
Add in flax meal mixture and yeast mixture to the bowl containing sugar and the Vegan Butter mixture. Whisk it until it is well combined. Add these to the bowl containing your flour and stir until it comes together into a sticky ball.
Lightly apply flour to a clean surface and knead mixture for about 5 to 10 minutes. Dough should be firm and smooth. Place it back into the mixing bowl, then cover it and place in a warm place for an hour. After an hour, knead the dough for 30 seconds and allow it to rest for 10 more minutes.
In a small bowl, whisk together the brown sugar, Vegan Butter, maple syrup and cinnamon. Set aside.
Roll dough into a flat rectangle about 16 x 20 inch. Using a spatula, spread Vegan Butter, sugar and the cinnamon mixture evenly on top.
Carefully roll up dough lengthwise so it becomes about 16 inches long. Cut it into 1 ½ inch sections using a sharp knife.
Preheat your oven to a temperature of 400F (204C). Place them close together with the cut side up into a 9×13 glass or ceramic baking dish that’s been lightly greased. Next, sprinkle walnuts and raisins all over them and cover them with plastic wrap, allowing the buns to rise for another hour.
Prepare your icing and set it aside.
Bake them until they begin to to turn golden, which should take about 15 minutes, but be sure to rotate the dish halfway through. Pour the icing on top of them, though you may heat it up prior if it has hardened.
